Recipe from: http://thehathicooks.blogspot.com/2011/11/how-to-make-best-chai-ever.html **I used ground spices because I don't own a spice/coffee grinder. The recipe calls for 1 cup + 7 tablespoons of black pepper. I used only 1 cup and it's spicy/hot enough for me. Author suggests to use less pepper if you're not accustomed to spicy hot drinks and gradually add more if necessary!** Variations: boil mix, tea, sugar and water. Froth milk and add separately for a chai latte. Try it iced as well! I haven't tried it with non-dairy milk but it will work too. Thanks for watching my video ! The Chai ka Masala is the secret behind making the perfect Masala Chai, and here we show you how to make this magic ingredient. A bit of this and a bit of that, roasted and blended together to make an aromatic and flavourful chai, that can pep you up and comfort you like a good friend would... Preparation Time: 5 minutes. Cooking Time: 1 minute. Makes ¾ cup. 3 tbsp cloves (laung / lavang) ¼ cup cardamom (elaichi) 1½ tbsp black peppercorns (kalimirch) 2 sticks cinnamon (dalchini) ¼ cup dried ginger powder (soonth) 1 tsp nutmeg (jaiphal) powder 1. Combine the cloves, cardamom, black peppercorns and cinnamon in a broad non-stick pan and dry roast on a medium flame for 1 minute. 2. Transfer into a plate and keep aside to cool completely. 3. Once cooled, add the dried ginger powder, nutmeg powder and blend in a mixer to a smooth powder. 4. Store in an air-tight container and use as required. Handy Tip: This remains fresh for 4 months when stored in an air-tight container.
