My mama was an amazing cook as well, but there was just something about being in granny’s kitchen. We all gathered around the table when we went to her house. She had a kitchen that was about 12x12 . Hey yall!, it’s Tammy with Collard Valley Cooks! I am a southern girl born in raised in Collard Valley in Polk County Georgia. My entire (Benefield) family had around 150 acres and we mostly raised cattle. We raised our own corn for feed so it was field corn. We also raised our own hogs for sausage and bacon, and of course our own beef. We fed our bulls feed before sending them to the butcher so the meat would be delicious. Not sure why everyone wants grass fed beef and free-range chickens. They really do not taste as good as those fed with feed. We had a large family and when I was young all of daddy’s brothers and sisters lived in the valley around his parents. It was a great place to grow up with lots of things to see and do all around. Country people like us love the smell, beauty and fruit of the land. Daddy coon hunted for fun, and we watched our tv together in the living room at night while mama watched her soap operas during the day. We went to church on Sunday, school during the week, the grocery store on Friday’s and that was our life. No vacations, no camping, just plain old southern country people NOW FOR THIS FAMILY RECIPE: Boston Butt Roast (Crockpot) BOSTON BUTT ROAST CROCK POT LINER 1 1/2 TSP. SALT 1 TSP. BLACK PEPPER LIGHTHOUSE FREEZE DRIED SALAD BLEND 1/2 TSP. LIQUID SMOKE 3/4 CUP HOT WATER 1 ONION (CUT IN QUARTERS) Line crockpot with crockpot liner. Add Boston butt roast. Sprinkle with salt and black pepper. Sprinkle with Lighthouse freeze dried salad blend (or other if you do not have it use any other salad blend) If you have some fresh sage or other herbs that would be even better. Add onion around roast. Mix liquid smoke in hot water and pour around edges (do not knock off seasonings) Cook on high for 2 hours and turn down to low setting for 4 hours. Servings depend on size of roast. Or cook on low for 8-10 hours. “Pork pairs well with sweet potatoes. Chop up leftovers, add your favorite BBQ sauce and eat sandwiches another night for dinner with potato salad and Cole slaw…Tammy”

Thanks for coming by and watching how I cooked up a Pork Shoulder or Pork Butt as its also called for this particular cut of pork for SUPER BOWL Sunday. This is completely a different way of how I have cooked Pork butts in the past .But I am sure I can pull this off I prepped the night before .My prep consisted of covering the entire pork shoulder in mustard .Once its covered all the way around I take my spice rub of choice and cover the Pork butt . I wrap it and leave it overnight to let the spice make its way into the meat . I also chose to add the BBQ sauce to it and let it set all night .You can wait to do this the next day to let your seasoning work longer , The pork shoulder comes from the upper part of the hog from like the name says its from the upper part of the shoulder from the front leg containing the blade bone in it . I started first thing in the morning and was set to leave it for about 8 to 10 hours . I put it the fridge the night before I cooked it to let my seasoning work its way into the meat. I set it on low for a long cook to render down and just be fall off the bone tender just right for sandwiches and be ready just before kickoff . From the fridge I took it to the crock pot and set it on high beginning at 9:30 AM and I also added about a coffee cup of water and liquid smoke and let it all simmer and slowly cook down and tenderize the whole cut of meat. How will you know when its done ? The bone will easily pull out when its done. Once the Shoulder Bone pulls right out of the pork shoulder you know its ready to shred and make sandwiches.
