This is relatively easy to do but requires you to deviate from the instructions and add a few ingredients that are not supplied from the kit. Most of what I added are things that you will want to have laying around if you plan to make more wine in the future. Additionally, I concentrated the kit from 6 gallons to 5 gallons and made some acid adjustments to compensate for the change.

This is the Fontana Cabernet Sauvignon 5 gallon kit, plus my modifications to the instructions. http://smile.amazon.com/Cabernet-Sauvignon-Fontana-Wine-Premium/dp/B00I4ZS0G4/ref=sr_1_1?ie=UTF8&qid=1448337165&sr=8-1&keywords=fontana+cabernet I added 3 cups of sugar to the 5 gallons of mixed up wine to get the SG up to 1.10 to make my final alcohol concentration about 13.5%. I like a good stout wine. Before I added the sugar it was at 1.075. I also added 1 ounce of heavy toast American oak chips to each gallon carboy. I intend to let it ferment in the primary for 2 weeks, then rack and add more wood chips, and let it set in the secondary for another 2 weeks minimum, then rack again and let it set for another month or two. Then I'll de-gas, clarify and stabilize, and bottle it. I'll post how it came out.
