Ingredients Matter Daal/Peas Daal-1cup Chana Daal-1/4cup Green Chilli-6 Dry Red chilli-6 Small onions-15 or Big Onion-1 big Ginger-medium Curry leaves-2strings Asafoetida powder-1/4tsp Salt- Coconut Oil-for frying Method Soak both daal for 2 hours wash well and drain Crush ginger chillies, curry leaves ,small onion together In a bowl add these along with asafoetida powder Reserve 2 tbsp dal and grind rest of the dal to coarse paste Then mix this to the onion mix.. Heat oil in a kadai..when the oil is medium hot mix salt to the dal mixture.. mix well Make small balls and press between the palm and make vada Deep fry in medium flame till cooked well .. So the tasty nadan vada is ready to serve .. Have with hot tea :) Enjoy !!
Ingredients Fish -4 medium Ginger-1 medium Garlic-2 Green chilli-4 Curryleaves-4 Small Onion-2 Pepper-1tsp Turmeric Powder-1/4tsp Kashmiri Chilli Powder-1tbsp Chilli Powder-1 1/2tbsp Fennel seed powder-2pinch Coconut Oil-1tsp Vinegar-1 1/2tbsp Salt-1to 11/4tsp Water- Oil -for frying Curry leaves Clean and wash fish with salt and vinegar ..Here I used 4 medium size Pomfret .. Vinegar help to remove the bad smell from the fish .Make gashes and once again wash and drain the fish Now have prepare the masala for that in a jar add green chilli, ginger,garlic,small onion ,curry leaves ,turmeric ,kashmiri chilli powder, chilli powder ,fennel powder ,pepper ,salt ,vinegar, coconut oil and water and make a fine thick paste MARINATE the fish pieces with this masala and keep in the fridge for minimum 20 minutes Then shallow fry the fish till cooked well .. U can use any type of oil u like ..i always use coconut oil so plz try the authentic kerala fish fry and plz post ur feed back
Ingredients Jackfruit seeds-15 Raw mango-1/2 of 1 Turmeric powder-1/4tsp Chilli Powder-3/4tsp Curry leaves -2strings Grated Coconut-3tbsp Mustard seeds-1/2tsp Dry red chilli-2 Coconut Oil-11/2tbsp Water -11/4cup Method In a cooker add cut jack fruit seeds along with turmeric powder ,chilli powder and salt. Cook for 2 whistles in medium flame .. After the cooker cools down open and add mango and cook for 1 whistle and open the cooker quickly . To that add ground coconut paste and boil well.. Now season with mustard seeds, dry red chilli d curry leaves .. Close the cooker for 10 minutes and serve with rice .. So the tasty chakra kuru manga curry is ready ...
Ingredients White Rice/Pacha ari-2cup Palayankodan pazham-150gm Coconut pieces - Ghee-2tbsp Cardamom powder-1tsp Jaggery-300-400gm Salt-one pinch Water -1cup (approximately ) Method Take 2 cups of white rice .. Wash well until clear .. Then soak for 6 hours.. Then grind the rice in two three batches by adding small amount of water .. The batter should not be too fine .. Pour the batter to a container .. Take bananas( 150gms) I used here Peel and grind to a smooth paste along with rice batter Then melt and strain jaggery ..(Here I took 300gms of jaggery ,melted in 1/2 cup water ) Pour this luke warm jaggery syrup in to the batter and mix well.. Roast coconut pieces in 2 tbsp of ghee until brown shade .. Add this to the batter .. Add cardamom powder and pinch of salt .. Mix well..taste the batter .. Adjust the sweetness according to ur taste Close the batter and Allow to ferment for 8 hours in a warm place .. After 8 hours take a unniyappam mould and pour coconut oil When hot pour one table spoon of batter in to each mould ,then adjust the flame to medium and flip the appams and fry until golden brown shade .. Saute well..when raw smell goes add big onion,small onion ,green chilli and salt ..saute well When the onion become light brown in colour ,add all the masalas (chilly powders,turmeric powder,coriander powder d garam masala ) and mix well and stir well until the raw smell of the masala goes Then add tomato pieces and salt … Close the pan with a lid and allow it to cook for 5 minutes in a low flame .. Open the kadai and mix well .. Then add cleaned chicken pieces into the masala and mix well.Close the pan and cook for 10 minutes in medium flame stirring occasionally .. By that time u can see water coming out from the chicken,let the chicken cook in that water only .. .In between open the kadai and stir well . U can check the salt..(If necessary add salt).When the chicken is cooked(chicken will be soft by that time ) add garam masala powder,curry leaves and hot water.. Cook for another few minutes or until the gravy become medium thick . By that time u can see the gravy to be dark brown in colour and oil will be coming out .. now add green chilli slices and tomato ..and lots of curry leaves .. close the kadai for few minutes .. Transfer in to the serving bowl and serve with appam,chapati,pathiri etc… If u want u can add thick coconut milk in the end ..It increases the taste and best combination with pathiri..:) U can adjust the spice level according to ur taste ..:) small tip: Actually the most diff thing is to cut onion when we make chicken or biriyani etc… ..Dont waste ur tears😉 .So from now no more tears…!! So when we start making chicken or anyother recipe first peel the onion and wash them and keep it inside the freezer for min half an hour .And keep doing other works..Remember to close the onion( u can put them in a air tight paper bag or in a vessel with a lid) coz if we keep onion in the freezer with out closing,the smell will be remain in the freezer for long .. So after half an hour take it from the freezer and slice .. Now look at the magic…no more tears and very easy to cut ….!!! Hope u will try this out … Love :) Veena
Authentic Kerala Dishes with my personal Touch 😍 Serves for :3 Ingredients Chicken -1/2kg Kashmiri Chilli powder-3/4tbsp Chilli Powder-1/2 tbsp Turmeric powder-1/4tsp Pepper powder-1/2tsp Coriander Powder-1tsp Garam masala-1/4 tsp Curry leaves -plenty of Coconut oil- Salt Coconut Milk-1cup Tomato-1/2 Chilli-6 Onion -2 big Ginger -1 medium piece Garlic-4 Method In a kadai add all powders and coconut milk .Mix Well.. Then add chicken pieces and salt ..Mix well with hand.. Now close and cook..Once the chicken is cooked open the Kadai and allow the water to get dried.. Now the chicken pieces will be coated with masalas.. In other pan add coconut oil ,fry coconut pieces .. Then add ginger garlic paste ,saute well .. Now add finely chopped onion and green chilli and salt .. Add curry leaves too.. Saute till light golden colour .. Then add chopped tomato and cook .. Now to this add cooked chicken and mix well.. Roast well.. Add garam masala and pepper powder according to ur choice .. Finally sprinkle coconut oil and curry leaves ..Close for 5 five minutes and serve ..
