Learn how to make the BEST banana nut bread there is! Super moist and loaded with freezer ripened bananas and walnuts. No dense and dry banana bread here! Don't forget to save some slices of this for banana bread french toast on Sunday morning. ;-) What you'll need: 3 medium bananas 1/2 cup (1 stick) unsalted butter or margarine, softened 1 cup granulated sugar 2 large eggs 1 1/2 tsp vanilla extract 1 1/2 cups all-purpose flour 1 tsp baking soda 1/2 tsp salt 1/2 cup sour cream 1/2 cup chopped English walnuts or nuts of your choice (pecans, black walnuts, almonds, macadamia's, etc) Let bananas ripen on the counter until speckled and then freeze for 1-2 days. Take out to thaw 4-6 hours before you want to make the bread. Cut off the ends and squeeze banana and juices from peel into a bowl and mash with a fork. In a large bowl, cream together butter and sugar. Add in eggs and vanilla and mix well. In a separate bowl, combine flour, soda and salt. Add dry ingredient mixture to wet mixture and mix well. Add in banana puree and sour cream and mix well and finally mix in nuts. Pour batter into a greased 9" by 5" loaf pan and bake in a 325*F preheated oven for 60-75 minutes or until a toothpick or knife inserted into the center comes out clean. Let cool for 10 minutes in the pan and then turn out. Slice and serve or store in an air tight container for 5-6 days. Makes 1 loaf. Enjoy!! In my opinion this is the best banana nut bread recipe you will find. It is very easy to make, super flavorful and moist. You will need very ripe bananas for the best outcome so the blacker the peel the better. Sometimes we end up with very ripe bananas and we are not ready to make bread. It is fine to freeze them. Simply thaw them before using them. In this recipe I am using sour cream. You can easily substitute that for buttermilk, whipping cream, milk or yogurt. Turn this bread into a dessert by simply adding toppings such as vanilla ice cream, caramel sauce, candied walnuts and a pinch of sea salt! Dry Ingredients: 1 1/3 cups all-purpose flour 1/4 teaspoon baking powder 1/2 teaspoon baking soda 2/3 cup white sugar 3/4 teaspoon kosher salt 1 teaspoon cinnamon 1/4 cup turbinado sugar Wet Ingredients 3 ripe bananas 5 tablespoons unsalted butter, softened 2 eggs, room temperature 1. Preheat oven to 350 F 2. To a large mixing bowl add, 1 1/3 cups all purpose flour, 1/4 tsp baking powder, 1/2 tsp baking soda, 2/3 cups white sugar, 3/4 tsp kosher salt, 1 tsp cinnamon 3. Combine and set aside 4. To another mixing bowl, add 3 very ripe bananas and mash well with a fork (consistency almost like a paste with small lumps) 5. Add 5 tablespoons softened and unsalted butter and 2 room temperature eggs 6. Combine with a fork, mashing up the butter as you go 7. Combine wet and dry ingredients together and mix well with a spatula 8. To a greased loaf pan, pat turbinado sugar on all sides liberally 9. Pour batter into pan 10. Shake to distribute evenly and pat on counter to remove any air bubbles 11. Bake for 40-50 min (test with a toothpick around 40 min and if comes out cleanly, remove) 12.
